Space and Time journey back into our solar system. The magic of brewing, at its core, is the expansive wheel of flavors you can create with just four ingredients: water, malt, hops, and yeast. Space and Time is our Imperial Stout that does just that. Notes of melted dark chocolate, warm roasted coffee, and homemade caramel rise from its pitch-black body. This is a beer we've become intimately familiar with over the years; at any point in time, it exists in various stages of aging in our extensive barrel cellar, and this fresh version is a staple in our brewhouse's repertoire. Freshly harvested, un-kilned whole-cone Cascade hops underwent a cryogenic lupulin separation process, preserving their delicate oils and volatile aromas. This beer bursts with hoppy aromas that can only be attained during peak harvest. Heed the roar of the indomitable Rye IPA! We've been subtly dropping a line of Rye IPAs, and they've become somewhat of a sleeper hit. Sabertooth is a hazy Rye IPA crafted with our House yeast. A juicy blend of hand-selected hops brings forth aromas of grapefruit, mango, and blood orange. We then rocket a dose of Warrior hop extract whose pine resin notes blend wonderfully with rye's inherent spice. The malt bill features local rye from Thrall Family Malt and a special type of pilsner malt called Ereclea, a Mediterranean variety with notes of honey that approach a sweet fruitiness. It was this time in October four years ago that we quietly opened our seafront taproom in Sandwich. To say that the project is a labor of love would be a complete understatement. When we acquired the building, it was in a state of near total disrepair, and our renovations stripped the building down to the bone – a necessary surgery to build it back up again. We didn’t show progress photos during construction because we enjoy the surprise and delight of a grand reveal; however, we thought now was a good time to show you a few images of what things looked like during renovations in the spring and summer of 2021. A few slides at the end illustrate the extent of the transformation. There’s nothing quite like making an old space feel alive again. Your presence here has brought the space to life in ways we never thought possible - thank you for that. We keep it running year-round, and the ‘off’ season is unequivocally the best time to visit.
