Almost a year to the date since we've seen our Russian Imperial Stout.🌌⏳ Space and Time is rich in notes of melted dark chocolate, roasted grains, and caramel that keep evolving as the beer opens in the glass. While it's a classic sipper, it's incredibly smooth and approachable, and you can share it at your leisure. 😉 To achieve these flavors, we implement two hot-side procedures: a double mash and an extended boil. These tweaks are exactly as they sound: we add a secondary charge of grain after the initial mash, then let our kettles roar. This process lets us extract more sugars from our grains, concentrate the wort, and develop deeper, richer malt flavors. Worth it every time🍫
Space and Time journey back into our solar system. The magic of brewing, at its core, is the expansive wheel of flavors you can create with just four ingredients: water, malt, hops, and yeast. Space and Time is our Imperial Stout that does just that. Notes of melted dark chocolate, warm roasted coffee, and homemade caramel rise from its pitch-black body. This is a beer we've become intimately familiar with over the years; at any point in time, it exists in various stages of aging in our extensive barrel cellar, and this fresh version is a staple in our brewhouse's repertoire. The photo that graces the can was taken on a cold, snowy winter night as we neared the end of our tenure in Brimfield. It's a core memory; it marked a moment where we were leaving what we loved behind to embark on a new journey that has led us to many places we never could have imagined. The same restless energy that reverberated through us then still reverberates through us today. The Space Between Truths: Further Reaches with Vanilla is a barrel-aged stout consisting of two distinct batches of Truth—one aged 28 months, the other 36 months—which is then blended with a single batch of barrel-aged Space & Time aged 30 months. It was then conditioned on mounds of freshly scoured vanilla beans. The synergy between the chocolate notes of the base beer, the vanilla character of charred American Oak, and the sweet, mellow aroma of fresh vanilla beans is something to behold. The Space Between Truths: Further Reaches is a pure barrel-aged stout consisting of two distinct batches of Truth—one aged 28 months, the other 36 months—which is then blended with a single batch of barrel-aged Space & Time aged 30 months. It is a complex expression of threads from our barrel program blended such that we accentuate the best individual attributes of each. We enjoy notes of chocolate-covered bourbon candy, chocolate-covered raisins, and oaky vanilla. We focus on perpetual improvement for your perpetual enjoyment.
