Starting this crisp Halloween with a special cold brew featuring a single-origin coffee by Diego Robelo, proprietor of one of Costa Rica’s most renowned coffee farms. Since 2022, we’ve sourced Diego’s coffees as components for our Paragon and House blends. Not only does Diego push the boundaries of coffee fermentation, but he has also created a varietal garden that is home to a massive amount of heirloom and hybrid coffees. For this release, we roasted Centroamericano, an Ethiopian hybrid known for thriving at high altitudes, very well suited for the volcanic soil and shaded fields of Aquiares. Their natural processing methods involve a three-step drying process: two days on ceramic floors, ten days on raised beds, and one day in a mechanical dryer. The result is a blend of light and bright notes of apricot, with rich undertones of plump raisins.
