We're releasing a sentimental and important Gin for our distillery today. It's called Percy's Le Prince Des Pommes and features the fruits from our labor of planting our own apple trees half a decade ago and the patience required to see through such an ambitious program. Distilled from our estate apple brandy, this limited edition gin features only one botanical, juniper! Despite its simplicity, it displays a complex and multifaceted flavor profile that reveals something new with every sip. Further maturation in oak casks imparts soft notes of vanilla and spice, lending nuance to a spirit already brimming with character. A thoughtful and stirring expression of our harvest season, enjoy this dram alongside a sumptuous meal or in your favorite gin cocktail. The fulfillment of seeing a product of character and elegance of this stature from it's inception and through it's release to the world is why we love what we do so much. We are starting this Friday with a magnificent whole-bean coffee. Oscar Omar Alonzo started growing coffee on his farm, Cual Bicicleta, in 1997, initially with 1500 trees with very high yields. However, he was in constant competition with low prices of non-organic coffee then. Converting to 100% organic production would cut his yield drastically. Still, by connecting with COMSA and increasing the organic fertilizers on his farm, Don Oscar could not only return to his previous production level yields but also increase them. The name of his farm, Cual Bicicleta, means "which bicycle," and comes from the idea that just like on a bicycle, through good and bad times, you just have to keep pedaling forward in life and never look back. The coffee team at Tree House hopes to showcase this triumph of a coffee story, as Oscar is now considered one of the finest producers in Honduras, all through his team's innovation and collaboration with his community.
