The art of barrel blending is a process that requires foresight, patience, and nuance. The same beer aged for the same amount of time takes on strikingly different characteristics from its wooden vessels, even when sourced from the same bourbon producer. These differences are cataloged throughout its rest and eventually blended until the desired flavor, aroma, and mouthfeel represent the pinnacle of their attributes. The Space Between Truths: Further Reaches is a pure barrel-aged stout consisting of two distinct batches of Truth—one aged 28 months, the other 36 months—which is then blended with a single batch of barrel-aged Space & Time aged 30 months. It is a complex expression of threads from our barrel program blended such that we accentuate the best individual attributes of each. We enjoy notes of chocolate-covered bourbon candy, chocolate-covered raisins, and oaky vanilla. We focus on perpetual improvement for your perpetual enjoyment. We would recommend enjoying this bottle now, as it's been captured at its peak flavor expression. Curiosity 156, Night Train Edition. This little number is a project that we've been working on with our friends at Clayton Hops for years. Featuring a new variety called Night Train, harvested outside of the 'normal' picking window, Curiosity 156 brings to life a novel hop experience. We were taken aback by its tropical aromas and crafted an extra creamy base to highlight its unique properties. Our friends at Perrault Farms grow incredible hops. They also happen to have a growing herd of Bison on their expansive acreage that stops us in our tracks every time we visit to hand-select our hops. 'Bison' is brewed in honor of this legendary American creature and features a magnificent lot of Simcoe grown on their premise. This Pale Ale pours a soft orange color with a touch of haze. A hop bill of 100% Simcoe bursts with complexity. Notes of passionfruit, apricot, and citrus peel flow over an undercurrent of woody pine. It's a one-of-a-kind Pale Ale that succinctly expresses the character of where it's grown.
