Bison is a Pale Ale featuring 100% Simcoe hops from one of the most stunning lots we've ever come across. It has a lovely soft profile with layers of passionfruit, apricot, citrus peel, and a distinct woody pine note. The first batch was such a hit that we had to spin up another one quickly. These hand-selected hops come from our friends at Perrault Farms. Our friends at Perrault Farms grow incredible hops. They also happen to have a growing herd of Bison on their expansive acreage that stops us in our tracks every time we visit to hand-select our hops. 'Bison' is brewed in honor of this legendary American creature and features a magnificent lot of Simcoe grown on their premise. This Pale Ale pours a soft orange color with a touch of haze. A hop bill of 100% Simcoe bursts with complexity. Notes of passionfruit, apricot, and citrus peel flow over an undercurrent of woody pine. It's a one-of-a-kind Pale Ale that succinctly expresses the character of where it's grown.
