Our Single Origin series continues via the Tolima region of Colombia! The Bayter Family's farm at El Vergel originally was an avocado farm back in the 1990s, but by 2016, a specialty coffee empire was born, embracing innovation with all different types of coffee varieties and fermentations. Their unique terroir, combined with their technical know-how and passion for their craft, had us very eager to roast and source anything we could get our hands on. These hand-picked pink bourbon cherries were first anaerobically fermented in grainpro bags, creating a foundation of complex and fruit forward flavor profile. This was followed by a 120-hour fermentation in airtight tanks with a controlled humidity of 22-25%, deepening the coffee's richness while still preserving its delicate floral characteristics. Drying is carried out using mechanical driers for 72 hours, locking in vibrancy and nuance while providing consistency with each bean. We have been astounded by the duality of bright citrus and mellow undertones, the forefront of these flavors presenting notes of tangerine and vanilla cream.
