Say hello to Hyperion, the latest in our line-up of West Coast-inspired Double IPA and a sister beer to Westy. Hyperion, the world's largest tree, is a coastal redwood that was recently discovered within the borders of Redwood National Park. Secrets hidden in plain sight, such as this, inspire us, stoking our imagination to wonder what other mysteries lie ahead. Its location is undisclosed and under increased protection by the park rangers; simply knowing it is healthy and ever-growing is a joy in itself. Hyperion is a hophead's dream, utilizing a blend from some of our favorite growers from the Pacific Northwest. Strata and Mosaic hops bring waves of blueberry, strawberry, and dank, earthy notes across the palate. We then added a charge of McKenzie hops, which pop with aromas of bitter grapefruit, lemon zest, and woody pine resin. We hope you enjoy this beer while contemplating the natural treasures of this world. Peach season is in full swing in Tree House land, and today our coffee department joins in on the fun with this delicious conceptual release: Peach Magic. Juan Puerta, a coffee producer, food science engineer, and entrepreneur, exemplifies this dedication to innovation. While studying at university, he began working alongside his professor's son, José Giraldo, on his coffee farm, which led to the creation of his processing lab, Sens Coffee. This coffee is one of Juan's standout methods, known as osmotic dehydration and fruit fermentation. After hand-selecting coffee cherries, they are washed and sealed in tanks for 12 hours, forming a juice called mosto. The team at Sens Coffee mixed this 'mosto' with peaches and glucose syrup, which was then reintroduced into the tanks for continued fermentation before it was drained and left to dry in its honeyed process stage. Our passion for flavor has led us all over the globe, crossing paths with kindred spirits like these incredible producers, who, like us, push their products to the limit through a mix of science, imagination, and love for their craft. The resulting, uncompromising coffee reveals notes of peach iced tea and gummy candy, kept crisp and cold in these elegant, slim cans.
