The Vergara brothers, who began producing coffee in 1990 in San Isidro, Huila, now manage a farm of 30,000 coffee trees. They specialize in unique varietals like Chiroso, Pink Bourbon, and the Sidra Bourbon hybrid, which offers flavors of ripe pineapple, pear crisp, and rose. In conjunction with innovative growers, our roastery continues to push the envelope of novelty and innovation with these releases. We hope you have a chance to try it. We're starting the day with a wonderful single-origin coffee from Colombia, Las Flores.

We're starting the day with a wonderful single-origin coffee from Colombia, Las Flores. The Vergara brothers started producing coffee in 1990 when their parents Edilberto and Nubia moved to the small village of San Isidro in town of Pitalito, Huila. Their three sons, Carlos, Johan, and Diego, now manage the farm of 30,000 coffee trees and have since upped their game in specialty coffee by studying different coffee production, cultivation, and processing areas. They have since planted some exceptional varietals, including Chiroso and Pink Bourbons, which you may be familiar with if you’ve been paying close attention to the single-origin releases of the Tree House coffee department. We are excited to debut our first Sidra Bourbon varietal here, thanks to the passion and initiative of this new generation of coffee producers. This emerging specialty coffee varietal is a hybrid between Bourbon and Typica and is characterized by a high level of sweetness, crisp acidity, and a velvety body.
