Early in the morning before the main batch is transferred a freshly cleaned stainless steal brite tank is filled with peach juice, purged of all its oxygen, and brought to an icy cold 32 degrees. our cellar crew hooks up to the speciality tank before the main transfer and sends in the fresh beer.
