Our recent devotion to rye as an ingredient continues today with our newest IPA, Ryelark. We taste subtle notes of malty caramel and peppery spice from its grain bill that create a foundation for an aggressive hop profile. Chinook and Cascade lend notes of fresh citrus peel, pine resin, and earthy hops, while Amarillo adds aromas of peach and lemon candy. The love of beer runs through every department in Tree House. A member of our maintenance team, Dan Flink, was an avid homebrewer with his father long before he joined our ranks. Their favorite beer to make was a Rye IPA named after their family boat. Alright, gang, we've lined up an absolutely packed day of releases, so we're going to get into it early. We're starting the day with a brand new German Weissbier called 'Still River'. Weissbiers are a wonder of fermentation and among the most refreshing styles of beer. Germans, while usually known for their lager prowess, are no strangers to ales, and delicious ones at that. During fermentation, this Bavarian yeast strain produces the ester isoamyl acetate, which is naturally produced in bananas, giving them their familiar tropical flavor. It's soft, light, and has incredible notes of banana, clove, and doughy wheat malt. If you're looking for a pillowy, fruity, easy-drinking crowd-pleaser, look no further than Still River. A Winter's Respite is a barrel-aged Barleywine inspired by the mulled wines of the Nordic region known as Glögg. To recreate its traditional flavors, we used a blend of citrus peel and spices atop a unique set of barrels that conjured luscious notes of toffee, oak, chocolate-covered almonds, sweet grape, mellow winter spices, and cozy mulled wine. This beer, steeped in history, has traveled an extensive journey to your glass and is truly a one-of-a-kind offering from our barrel cellar. The barrels that held this beer were first filled with fresh sherry in 1997 and aged until 2017. Once emptied, the barrels were refilled with a striking vintage of sherry from 1948 before being used to grace our base English Barleywine recipe. We also added a portion of Barleywine, aged in second-use chocolate bitters barrels, to further enrich the already complex notes imparted by the sherry. We hope you get a chance to try this rare offering, share it around the fireplace, and age a second bottle for Christmases to come. A foundational drink in our distillery, it represents a collaborative journey through our Charlton production facility. Kola begins as a stout whiskey, which is then distilled into a clear spirit that retains notes of cocoa and vanilla. It then rests on fresh vanilla beans and is blended with our house cold brew, freshly made in our roastery, a few steps from the distillery bay doors.
