Our Travels have such an impact on us we can't help but share our stories with releases like this. Agricultural roots run deep on the Nelson Lakes Farm, where they grow some of our most prized lots. When we last visited this pristine landscape we veered off the path and ended up at Mt. Ella Station, which in a previous life had been a bustling dairy operation. This fertile region has gone through enormous changes but all against a backdrop of what is now the Nelson Lakes National Park. This beer is our tribute to these memories. Mt. Ella Station is a New Zealand IPA that pours a brilliant yellow with a thick head of sticky foam. To represent its unique terroir, we blended hand-selected Paradisi and Cascade from this remarkable region. Notes of white grapefruit, sweet guava, passionfruit tea, and bright pine burst from the glass. Growing hops is a science and we've been privileged enough to tour some of the leading hop producer's labs. In these extensive greenhouses, clones are made and lineages are grafted over and over until novel aroma profiles arise. Pink, otherwise known as ID-158, is one of those hops that gets our mind racing with ideas. It tastes like nothing else, bursting with notes of tropical flavored bubble gums, apples, vanilla candies, and a myriad of stone fruit and citrus juices. Our summer seasonal drops today and is donning a gorgeous new can befitting of its delicious contents! This year's blend pairs two extraordinary washed Ethiopian coffees, each bringing a burst of life and flavor to honor those golden months of adventure. Our base coffee from the Danche washing station in the Chelbasa Village of Yirgacheffe was fermented in ceramic tanks that not only retain heat, but speed up the fermentation process, showcasing more clarity. The second half is from the district of Kochere, just south of Yirgacheffe, known for rich soil and high altitudes, resulting in a lively acidity. With bright and brisk tasting notes of citrus and black iced tea, Marigold delivers that perfect, refreshing kick that is light on the body, but sweet on the finish. We rely on our senses first and foremost when we create our hop blends, but in this day and age, we get an enormous amount of data from our suppliers, too. We want to take a moment to thank the City of Bamberg, Germany, for preserving the ancient tradition of smoking malt. A few revered breweries carry on this practice today, and Little Fire Oak is a beer we humbly offer into this canon of styles. After fermentation, we transfer Little Fire into our oak foeder for an extended rest, picking up notes of woody spice while simultaneously softening its body. Starting on our brew deck, we make a single-mash stout, which is then knocked out and fermented clean in our cellar. This dark and roasty malt beverage is then distilled into a crystal clear spirit carrying rich cocoa and vanilla notes imparted from its previous form.
