We’ve got a new January-only pie pouring out of our ovens in Tewksbury, Deerfield, Sandwich, and Saratoga: Tree House Mushroom Pizza. It starts with a rich white base of garlic and olive oil, then gets a hit of our house blend of fresh and aged cheeses. From there, we layer on cremini, button, oyster, and shiitake mushrooms for deep, earthy flavor and a proper layer of texture. Caramelized onions bring a sweet, jammy depth. It is then finished with freshly made gremolata - a blend of roughly-chopped parsley and lemon zest, with a touch of garlic and good olive oil. Bright, sharp, and aromatic, it accents the mushroom blend while cutting through it’s richness. A light finish of truffle salt brings it home. A true winter pie. Cozy, rustic, and loaded with character.

It's not every day a new King Julius variant drops. To make King Lagoon, a fresh batch of King Julius was conditioned with banana and toasted coconut, along with heaps of fresh vanilla beans. This is one of the most smoothie-inspired versions of KJ we've ever created. Mango Magic Cold Brew was a hit, and we've got a limited amount of this special release in whole bean form. Crafted as an ode to the sweet mango notes in Julius, these beans have a fascinating backstory behind their incredible flavor. Juan Puerta of Sens coffee hand-selected coffee cherries that were then washed and sealed in tanks for 12 hours, forming a juice called mosto. This mosto was mixed with mango and glucose syrup, reintroduced into the tanks for continued fermentation, then drained and left to dry in its honeyed stage. For those who enjoy tinkering with rest time and other facets of at-home pour-overs, small adjustments reveal layers of tropical flavors. California Dreaming is a West Coast-style IPA with an assertive hoppy bite. Cascade, Mosaic, and Strata hops lead with aromas of lemon jam, blueberries, and strawberry bubblegum. Notes of caramel malt then fade into a crisp finish with lingering notes of pine and grapefruit peel. It's a beer we dreamed up while traveling that ribbon of highway on the West Coast. It's going to be a great day to visit Tree House in Woodstock. To begin, we're dropping a fresh take on Woodstock Double IPA. The time we spend sourcing hops around the world is only the start. We put just as much work into cataloging and blending our hop library into a unique mix that’s unmistakably Tree House. This rendition features the relatively obscure Lily hop. In the glass, it pours a glowing yellow color. Aromas of grapefruit peel, passionfruit, sugary mandarin orange juice, and red currant lift from the rim. Bright tropical notes lead into a soft, clean bitterness that finishes quenching and welcoming. Big Bear Coffee is one of our favorite in-house collaborations. We take our fierce Imperial Brown Ale and condition it on select blends from our coffee roastery. It's a beer with a huge malt presence carrying notes of brown bread, chocolate-covered figs, and caramel balanced by an assertive dose of American hops. In honor of Julius Week, the coffee squad put together a spectacular cold brew featuring a mango co-fermented coffee. Mango Magic Cold Brew! This snappy Cold Brew is incredibly refreshing with notes of mango nectar and starfruit in every sip! We can't get enough of the incredible flavors produced from coffee co-ferments, so when we came across a mango-processed bean, we jumped at the chance to roast it in-house! We've procured multiple inventive releases from Juan Puerta, a Colombian coffee producer, and this batch was nothing short of exceptional. After hand-selecting coffee cherries, they are washed and sealed in tanks for 12 hours, forming a juice called mosto. The team at Sens Coffee mixed this mosto with a mango and glucose syrup, which was then reintroduced into the tanks for a continued fermentation before it was drained and left to dry in its honeyed process stage. Science + passion = unique, inventive, delicious coffee.
