Ana Donneys La Paloma cold brew is here! One of our favorite producers is Ana María Donneys, a fifth-generation coffee grower from Quindío, Colombia. For the last four years, we've been sourcing coffees with her at Café Primitivo. This naturally processed coffee from Ana's farm, Finca La Paloma, was first sealed in lactic anaerobic fermentation tanks (without oxygen) for 72 hours before the cherries were dried for 30 days. This method produces a clean, sweet, and vibrant cup, as the coffee team tastes notes of both red and tropical fruits! What's inside this can is truly an outstanding blend of food science, craftsmanship, and innovation. 🤓 Juan Puerta, a coffee producer, food science engineer, and entrepreneur, exemplifies this dedication to innovation. While studying at university, he began working alongside his professor's son, José Giraldo's coffee farm, which led to his own processing lab, 'Sens Coffee'. This coffee is one of Juan's standout methods, osmotic dehydration fruit fermentation. Castillo coffee cherries are harvested from leased farms, de-pulped, and then sealed in barrels infused with a 48-hour water-glucose solution of rose petals and lychee syrup. Afterward, the cherries undergo 3 days of patio drying, followed by mechanical drying to reduce moisture to 10%.
