@treehousebrewco cheese pizza. We’ve been making pizza longer than we’ve been making beer and have trialed every method and ingredient to arrive at a pie we can call our own. As any aspiring home or professional pizza-maker can attest, the passion for this craft quickly evolves into a lifelong obsession that is hard to shake. It’s a labor of love for us. We’ve sacrificed countless nights, weekends, and spare moments - alongside fifteen years of beer-making - to chase the ideal pie. We’ve trialed Neopolitan, neo-Neopolitan, New York-style, Sicilian, Greek, Roman, California-style, Detroit-style, Apizza, and the list goes on, arriving at what we call a hybrid of New York and New Haven-style that attempts to capture the essence and best attributes of both traditions. It has a crunchy bottom crust and fresh high-quality toppings to the edge. A long, relatively slow bake produces browning of the cheese and spots of charring on the crust. A perfect bite can be downright blissful. Like our beer, we consider it a life-long work in progress and continue to make minor tweaks and adjustments when crops change, new methodologies appear and new ingredients are introduced. The pre-ferment/cold ferment process is more an art than science, and we work hard in varying conditions to produce a fresh, reliable, high-level pie for you every time that you trust us with your patronage.
