Persist is a barrel-blended Imperial Stout carrying notes of maple-bourbon candies, chocolate-covered caramels, mocha-maple ice cream floats, and vanilla maple syrup. Featuring 60% barrel-aged maple stout, with an average age of 22 months, it is meticulously blended with its fresh counterpart for intense flavor and maximum drinkability. We then rest it on freshly roasted coffee, which enhances its warming maple notes and turns it into one of our most sought-after releases. It's no surprise it doesn't last long in our coolers, as it ages wonderfully for a future vertical tasting, holiday celebration, or simply a full glass enjoyed next to a roaring fire.
We use maple extensively across our lineup, but few beers hit as hard as Persist. Here, we combine barrel-aged maple stout with fresh maple stout to achieve the perfect balance of bourbon-forward character offset by fresh maple sweetness. The resulting blend is 60% barrel-aged and 40% fresh stout. For good measure, we finish it on freshly roasted coffee. In this perennial Tree House gem, we taste mocha-maple ice cream, vanilla maple syrup, bourbon candy, and sweet caramel malts.
