For this curious exploration into the art and science of hoppy beers, we experimented with stressing our yeast in new and untrialled ways to coax exclusive and intriguing fruit esters from fermentation.
Curiosity 71 (!) Certain beers stand out. While many of our beers are one-offs meant to capture our headspace as brewers in the current moment, we continue this series for a different reason. Our Curiosity Series gives us insight into our process, and with rigorous note-keeping, it's just as informative to recreate as it was to make the first time around. This entry was an experiment where we stressed our yeast in new and untried ways to coax intriguing fruity esters from its fermentation. When it comes to the conditions a certain yeast prefers, stress isn't necessarily a bad thing. By slightly altering its environment through pressure, temperature, and other more nuanced factors, a familiar yeast profile can produce novel aromatics that elevate the overall profile. Curiosity 71 bursts with notes of juicy white peaches, tropical zest, a hint of yellow raspberry, and sweet overripe pineapple. It's imperative to look to our past as we aspire to be the best version of ourselves in the future. A @keever classic graces the can.
