Just in time for a few festive flakes here in Massachusetts, we're pleased to present the 2025 edition of our Seasonal Double IPA, Snow! Snow is an incredibly soft, hoppy beer whose soft character comes from the addition of doughy wheat to the grist and a unique blend of hand-selected hops. Citra and Centennial bring notes of grapefruit peel, candied orange, mango, and pine, while Sabro lends juicy tropicality and a distinct coconut note. We're weeks away from the darkest stretch of the year, so we thought it apt to release a new Double IPA to brighten our spirits. Fade to Black is a Double IPA that pours a pale yellow color with a rising head of white foam. Citra and Mosaic hops lend aromas of grapefruit, mango, and candied citrus peel, floating above notes of malt and honey. A charge of Lotus hops then adds creamy notes of vanilla and sugary orange, which linger in a hoppy bite. The winter months seem to test us in making our own fun while we take note of the things in our lives we feel grateful for, as we resist the inescapable fade to black. Hello, Season of the Bock. King of the Mountain is a traditional German Bock, a dark amber Lager with a complex character that is perfect for chilly weather. Malt-forward but incredibly crisp, this beer has notes of dark cherry, tobacco, pine, and golden caramels. German barley shines as well with its floral and slightly fruity hop pairing of Hersbrucker and Magnum. Like all our Bocks, these beers are brewed well in advance of their release and are given extended rests in our Lager cellar as they clarify and develop a soft, tight carbonation. 🆕🆕🆕 Dubai Chocolate Oat Latte! 🆕🆕🆕 To create this decadent Tree House beverage, we began by creating a chocolate pistachio syrup from scratch using organic golden sugar, Ethiopian cacao nibs, and pistachio paste. We then infused this syrup into our house cold brew concentrate and added milk to mimic the creamy quality of phyllo dough and tahini. The resulting drink is an indulgent latte with notes of dark chocolate and robust coffee. The pistachio character, while delicate, presents as an ultra-rich, almost buttery nuttiness that really takes this latte to the next level. The exact kind of character you can expect from all-natural ingredients. You have to try it. Today's first release is a wholly unique single-origin coffee anaerobically fermented with beer yeast. It is an exceptional coffee, to be sure. 'Caturra Floral' coffee is a result of the work and passion of Andrés Martinez, a 29-year-old biochemical engineer turned coffee producer. This coffee bursts with notes of ripe, sticky melon, underneath which lie woozy notes of summer honeysuckle flowers. Within his small farm, El Sendero in Cauca, Colombia, he singled out two cherry collection points for the Caturra variety in Cauca and Nariño. Through his semi-washed and fermentation processes, this coffee exudes floral and honey note characteristics. The cherries are fermented anaerobically in beer yeast (you read that correctly) for 48 hours, depulped without water, and then fermented again with water for an additional 24 hours. After processing, the coffees are dried on raised sunbeds for 12 to 18 days, weather permitting, to preserve all the sweet, fruit-forward notes while maintaining the clean balance of a washed coffee. Producers such as Andre inspire us through his creativity, careful selection, and processing. A limited run of Sugarhouse returns today, a maple bourbon barrel-aged coffee, and decidedly one of our most delicious, complex, and imaginative cold brew offerings. Sugarhouse begins with our house-roasted coffee, which is cold-brewed before being placed into our own bourbon barrels. After an extended rest, which imparts notes of American oak, vanilla, and a subtle char quality complementing our coffee's rich roasted notes, we further the concept by blending in a small amount of bourbon barrel-aged maple syrup as a sweetener. Each of our production departments in Charlton—our brewery, roastery, and distillery—inevitably feeds off each other's creativity, and their respective crafts influence their direction. Our roastery is situated directly next to our distillery and a stone's throw from our barrel-aging cellar; this cold brew draws from their shared space and our collective know-how and passion for flavor. We brought this release back for the holidays in hopes that it adds to your special celebrations and serves as a well-deserved pick-me-up as you travel or prepare your home for gathering. Our Single Origin series continues with an incredible Colombian micro-lot from one of our favorite producers, Ivan Montoya. Every so often, we source a new coffee so beloved by the team that we try to bring it back for the next harvest season. This year, our wish was granted -the Chiroso bean is as stunning as ever. Building close-knit relationships with importers, especially farmers, requires mutual respect and trust, and our four-year relationship with Ivan Montoya's coffee is a testament to that approach. Chiroso is the name of a Caturra varietal specifically grown in Antioquia that has gained popularity and demand in the coffee scene over the last decade. The high-altitude conditions above 2,000 meters above sea level slow down the growing process, packing the beans with vibrant acidity, herbaceous sweetness, and a crisp mouthfeel. Transcendental is a new IPA that pours a glowing orange color and features a unique combination of Strata, Cashmere, Simcoe, and Citra hops. Within its fluffy body, notes of passionfruit, citrus zest, ripe stone fruits, and mango gummies rise above the glass.
