For this curious exploration into the art and science of hoppy beers, we experimented with stressing our yeast in new and untrialled ways to coax exclusive and intriguing fruit esters from fermentation. The result, paired with massive doses of potent American Hops, is a hugely aromatic beer with a soft flavor profile featuring singular notes of honeydew melon, ripe tropical fruit, a hint of yellow raspberry, and sweet overripe pineapple. A simple, natural effervescence provides the signature fluffy mouthfeel we have come to know and love from Tree House.

Juice Machine was originally devised and brewed to support our very first trip to Extreme Beer Festival in 2014. It is essentially a marriage of the King Julius malt bill with a hopping schedule more intense than than Very Green. The use of Magnum, Columbus, Amarillo, Citra, and Galaxy creates perhaps our most complex beer with unapologetic flavors of mango, creamy orange sorbet, papaya, and passion fruit with wave after wave of juicy hop flavor. In spite of its intensity, it is pillowy soft and drinks like a true pleasure - the embodiment of the Tree House ideal of hoppy beer. Poured vigorously, peaks of sticky foam erupt above the rim and leave white switchbacks of lacing cascading down the glass. For this rendition of Hold On To Sunshine, we added a small amount of cocoa dusted truffles to amplify the cocoa fudge characteristics of the base beer. It has all the delicious flavors you are accustomed to - rich milk chocolate, dark brown sugar, creamy espresso, and chocolate covered peanut butter cups - with an extra layer of chocolate complexity. It is never overtly saccharin, with a firm coffee acidity balancing things out, making it enjoyable to drink as it warms. Zoiglbier is a historical Lager, pouring a glowing amber hue with sticky foam mountains rising above the glass. Vienna, Pilsner, and a touch of flaked corn lend notes of toasted bread, honey-brushed crust, and a hint of caramel. Adeena hops complement the soft esters from a traditional yeast with notes of lemon, spice, and wildflowers. Living History. While inspired by the communal spirit of traditional Zoiglbier, our interpretation is rooted firmly in New England. We imagined what these beers might look like if they had evolved here, crafting ours with a nod to local ingredients and distinctly American character. A trio of grains from Connecticut showcases our regional terroir, much like historical German brewers would have relied on malt grown close to home. Adeena hops offer an American take on classic European noble varieties. With a hearty lineage, they are prized for their resilience while exhibiting a classic old-world character.
